INGREDIENTS

  • 2 cups reduced sodium chicken broth
  • 1 cup milk (I used 2%)
  • 1 teaspoon poultry seasoning
  • 1/2 cup flour
  • 2 cups water, divided
  • 1 cup uncooked quinoa, rinsed
  • 1/4 cup cooked, crumbled bacon (optional… sort of)
  • 1 pound boneless skinless chicken breasts
  • 2 teaspoons seasoning (like Emeril’s Essence or any basic blend you like)
  • 1/4 cup shredded Gruyere cheese (any kind will work)
  • 3 cups fresh broccoli florets


INSTRUCTIONS

  1. Sauce: Preheat the oven to 400 degrees and generously grease a 9×13 baking dish (seriously, be generous because it really really sticks to the sides). Bring the chicken broth and 1/2 cup milk to a low boil in a saucepan. Whisk the other 1/2 cup milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms.
  2. Assembly: In a large bowl, mix the sauce from step one, one cup water, quinoa, and bacon and stir to combine. Pour the mixture into the prepared baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the quinoa mixture. Sprinkle with the seasoning. Bake uncovered for 30 minutes.

  zoodles:


  • 1 1/2 lbs zucchini noodles (about 4 med zucchini) spiralized
  • Sea salt and pepper
  • 6-8 slices bacon cooked and crumbled (sugar-free for Whole30)
  • 1-2 tbsp reserved bacon fat or other cooking fat
  • 2/3 cup cherry tomatoes sliced
  • Fresh herbs and lemon juice for garnish if desired

Instructions

  prepare the pesto:


  1. In a food processor or high speed blender, pulse the nuts, garlic, and basil until “chopped”. Add in the lemon juice and parmesan, if using. While blending on medium speed, stream in the oil until fully combined, then with the blender off, stir in the sea salt and pepper to taste. Set aside while you prepare the zoodles.
  2. Once your bacon is cooked and crisp, leave 1-2 Tbs of bacon fat in the pan to sauté the zoodles.
  3. Squeeze out as much water as possible from the zucchini with paper towels. Set heat to medium to reheat the bacon fat. Add zoodles to skillet and toss with fat to coat, then sprinkle with sea salt and pepper.

  • 1 red bell pepper
  • 1 medium zucchini
  • 3 cups yellow potatoes
  • 4 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1.5 teaspoon Italian seasoning
  • 2 teaspoons minced garlic

  • 1/2 pound fresh asparagus
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 3 cloves minced garlic
  • 2-3 Tablespoons parmesan cheese

Instructions


  1. Preheat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil and set aside.
  2. Rinse the asparagus and trim off woody end pieces. Spread out in a thin layer on top of the prepared cookie sheet.
  3. Spray the asparagus lightly with a coat of olive oil spray. Sprinkle with salt, pepper, garlic, and parmesan cheese. Use your hands to mix the asparagus with all of the ingredients, then lay out into an even layer again. Spray with one more light coat of olive oil.
  4. Bake in the preheated oven for 8 minutes. Remove from oven and serve immediately. Enjoy!
