Grilled Zucchini humus Wrap
Fresh veggies area unit grilled to the letter and packed during this Grilled Zucchini humus Wrap!
Ingredients
- 1 zucchini, ends removed and sliced
- salt and pepper to style
- 1 tablespoon vegetable oil
- 1 tomato, sliced or few cherry tomatoes
- 1/8 cup sliced Spanish onion
- 1 cup kale, powerful stems removed
- 2 slices white cheddar cheese or jalapeno Gouda
- 2 giant Udi's protein free tortillas
- 4 tablespoons humus
Instructions
- Heat a frypan or grill to medium heat.
- Remove the ends from the zucchini and slice length wise into strips. Toss sliced zucchini in vegetable oil and sprinkle with salt and pepper.
- Place sliced zucchini directly on grill and let cook for three minutes, flip and cook for two additional minutes.
- Set zucchini aside.
- Place the tortillas on grill for about one minute, or simply till grill marks area unit visible and tortillas area unit pliable.
- Remove tortillas from grill and assemble wraps, two tablespoons of humus, one slice of cheese, zucchini slices, 1/2 cup kale, onion and tomato slices.
- Wrap tightly and luxuriate in at once.
